Shun cutlery when you say the word in English is sounds like (shoon). Shun cutlery by Kershaw are Japanese. The well known cutlery designer Ken Onion maybe one of the most notable cutlery designers in the world has 36 patents for his designs. One of his famous designs is the (SpeedSafe) system used for opening the pocket knives by Kershaw.
The special feature built into Shun Cutlery is the steel construction. The cutlery is made from VG-10 extremely hard steel. This very hard steel is well known for holding an edge for a much longer time than other types of steel. An unusual feature of this type of steel is that there is an extra 32 layers of soft steel that covers the harder steel. This makes the cutlery resist corrosion and always looks very shiny.
New developments in the Shun cutlery line is the latest in classic design and new ergonomic feel. Ken Onion's goal was to provide the hard working chefs kind of a break from the pain of cutting, dicing and slicing for all the long hours. In the new cutlery designs a curved handle was developed to get rid of the gap between the handle and the palm of the hand. The bolster allows the index finger to be placed on the bolster and not the spine for added comfort. There is a bump that was added to the handle to provide extra control to both smaller hands and those with the larger hands.
