Got cutlery?  Then a Chef's Choice electric knife sharpener might just be what you need to keep from tearing tomatoes as you cut, or worse yet, slicing your finger because the dull blade slipped.  If you've got cutlery, you need something to keep then sharp!

I purchase a series of new Cuisinart kitchen knives that were dull; in fact, the blade steel had a burr on it, a sign of an unfinished sharpening process. The knives are made well and use good quality steel, but the company's sharpening process was sorely lacking.

Chef's Choice Electric Knife Sharpener to the Rescue

No problem, thanks to the model 120. I sharpened several paring knives, two Santoku blades, Chef's, long meat slicing, serrated bread, and a serrated fruit/veggie knives with exceptional results.

The blades were able to slice through paper after the process, much like a quality sports knife. No need to spend more for an exceptional sharpener; the Chef's Choice electric knife sharpener 120 diamond hone will fit the bill nicely.

(Not to mention keep your blades nice and sharp.).

Do not suffer with a dull knife ever again!

Shun cutlery when you say the word in English is sounds like (shoon). Shun cutlery by Kershaw are Japanese. The well known cutlery designer Ken Onion maybe one of the most notable cutlery designers in the world has 36 patents for his designs. One of his famous designs is the (SpeedSafe) system used for opening the pocket knives by Kershaw.

The special feature built into Shun Cutlery is the steel construction. The cutlery is made from VG-10 extremely hard steel. This very hard steel is well known for holding an edge for a much longer time than other types of steel. An unusual feature of this type of steel is that there is an extra 32 layers of soft steel that covers the harder steel. This makes the cutlery resist corrosion and always looks very shiny.

New developments in the Shun cutlery line is the latest in classic design and new ergonomic feel. Ken Onion goal was to provide the hard working chefs kind of a break from the pain of cutting, dicing and slicing for all the long hours. All chefs know the agony of cutting while standing for hours. The body strain on the shoulders and hands can be painful at times. With the newer designs in Ken’s cutlery the stress relief is fantastic.

Ken Onion’s cutlery special designs are perfect for the hard working chef. A left handed chef can also benefit from the new designs and the very tall and very short as well. Most chefs will hold his cutlery blade with index finger and thumb for precise cutting. The bad part is this makes blisters, strain and the carpal tunnel problems over long term.

In the new cutlery designs a curved handle was developed to get rid of the gap between the handle and the palm of the hand. The bolster allows the index finger to be placed on the bolster and not the spine for added comfort. There is a bump that was added to the handle to provide extra control to both smaller hands and those with the larger hands.

Chef's knives come in many different shapes and sizes, and are used for many different purposes. Choosing the right one can be overwhelming at times. Sometimes the cost can be prohibitive for a full set and it does not mean you can’t have a few of the best chef’s knives to do the job. By selecting a few of the right chef’s knives you will have the best that can be used in many different ways.

With a very limited budget which is often the case in this economy maybe the budget will only allow a single knife. That being the case the selection should be a chef’s knife and the reason behind this is because. The chef’s knife can be used for the most cutting tasks in the kitchen. Most of your cutting needs from cutting some sandwiches or slicing some tomatoes your chef’s knife will get the job done.

Okay your first knife should be a chef’s knife, so how do you go about finding the right one. As this may not be an easy task like grandma’s day because the selection is just out of proportion. So many to choose from but the perfect chef’s knife for you is out there – it’s just going to be a small task to find it.

The first thing to consider is the size of your hands, why you say? Small hands have trouble with big knives. The same goes for big hands will have trouble with little knives. With the right size for your hands you will be able to control your cutting well and it will feel right when using it.

When considering your hand size the knife grip can play a part in your control of the blade. With large hands the grip may not matter so much, because you will be able to handle most grips. But with small hands a flattened handle will give you a much better grip and better control.

The next consideration is the type of cooking you do most will play a part on what you use your knives for. A Chef’s knife kept in good condition can be used for a lot of things like dicing and julienning. From time to time you may need a special knife for more complicated tasks for a specific job.

Selecting the appropriate chef’s knives means considering what you will be doing in your kitchen environment and how quickly you need things to get done. Doing a little homework to find which knives are best for you and to get the best deal from among them will make life easier.
